Our signature dough is made with a little yeast and natural rye levain to give it a fuller flavor. We use real high fat butter to create 27 thin and flaky butter layer.
In France, Kouign-Amann pronounced "kween uh-man". There are two main shapes: a crown or a roll, we produce the latter. To make it easier we call these Breton Rolls after the region in France they are from, Brittany.
